Last fall my wife, Jess, and I tried a new recipe that worked well for both duck and geese. We put the boneless breasts in a crock pot with an onion soup packet, and some sliced onions. Put the crock pot on low, and after about 3 or 4 hours, just when you can pull the meat apart with a fork with ease. Added a bottle of barbeque sauce, which ever brand your prefer, and cooked it for another hour or so on low until it was all hot.
Once it was all hot you can serve whenever you want, our favorite way is on a pretzel bun with some cheese on it!
The duck doesn't have any game flavor, and is super tender! This also worked with Coot!!!
Enjoy, Tanner Wildes
