Here is a good soup that goes well with any game bird.
Creamy wild rice mushroom duck soup.
8 or more duck breast precooked however you choose medium rare. 1 package bacon brown diced 8 carrots chopped 1 large shallot diced 5 cloves garlic diced 8 celery stalks chopped I large onion chopped 1 package baby bella shrooms chopped 1 package shitake shrooms chopeed 2 tablespoons Rosemary 2 tablespoons Thyme 2 packages uncle bens 25 min wild rice 3/4 cup flour 2 cups Half and Half 1/2 cup Butter 1 cup white wine 5-6 cups chicken or duck broth Flow: -Precook duck and dice up -make both boxes of rice without seasoning -Sautee all veggies with olive oil with rosemary, garlic and thyme -Add diced cooked bacon, diced cooked duck ,sauteed veggies, and rice to 6 cups of chicken broth.Bring to boil. Simmer 15 minutes. Stir in white wine. Make roux: Melt 1/2 cup butter in medium heat. Stir in rice seasoning packet until bubbly. Slowly stir flour in 1 tbsp at a time. When thick enough slowly whisk cream in. Tweak as needed.
